Ingredients
- 2 lbs salmon fillets

- 3 garlic cloves, smashed and minced

Instructions
1. Preheat the oven to 425°F.
2. Lightly coat the bottom of a large cast-iron skillet or wide baking dish with some of the oil.
3. Slice the bell peppers and red onion into evenly sized pieces. Smash and mince the garlic.
4. Place the vegetables in a bowl. Add 2 teaspoons of Cajun seasoning and half of the oil. Toss until evenly coated.
5. Pat the salmon fillets dry with paper towels. Rub them with the remaining oil and season evenly with the Cajun seasoning.
6. Check the seasoning before adding salt. If the Cajun blend is already salty, additional salt may not be necessary.
7. Place the salmon skin-side down, if the fillets have skin, in the prepared skillet or baking dish. Arrange the vegetables around the salmon.
8. Bake for 20–25 minutes, depending on the thickness of the salmon.
9. Check the thickest part of the salmon with a food thermometer. The USDA recommends cooking fish to a minimum internal temperature of 145°F (62.8°C).
10. Remove the pan from the oven and serve the salmon with the roasted vegetables.
