Fresh sardines are a classic ingredient in Mediterranean cooking, valued for their rich flavour, simplicity and versatility. In this recipe, grilled sardines are paired with a vibrant blackberry escabeche — a sweet, tangy marinade that combines fruit and spices to create a dish with a surprising balance of flavours.

Grilled Sardines with Blackberry Escabeche
Serves: 4
Ingredients:
12 fresh sardines, cleaned and prepared
200g blackberries
2 garlic cloves, thinly sliced
1 small red onion, finely sliced
A handful of fresh herbs, such as parsley or coriander
100ml vinegar
100ml extra-virgin olive oil, plus extra for grilling
1 tsp honey or sugar, optional
1 bay leaf
A pinch of chilli flakes, optional
Sea salt and freshly ground black pepper
Prepare the Blackberry Escabeche
Begin by making the marinade. Warm the olive oil gently in a pan and add the sliced garlic, onion and bay leaf. Cook slowly until the onion softens but does not brown, allowing the flavours to develop.
Add the blackberries, vinegar and a small amount of honey or sugar if needed. Simmer gently until the fruit begins to break down and release its juices. The mixture should become a colourful sauce with a balance of sweetness and acidity.
Season with salt, pepper and chilli flakes if you want a little heat. Remove from the heat and allow the escabeche to rest while preparing the sardines.
Grill the Sardines
Sardines are best cooked simply to preserve their natural flavour. Pat them dry, season with salt and brush lightly with olive oil.
Grill the fish over high heat for a few minutes on each side until the skin becomes crisp and the flesh is cooked through. Sardines cook quickly, so it is important not to overcook them.
Once ready, place the grilled sardines on a serving plate and spoon over the blackberry escabeche. Allowing the fish to rest with the marinade for a few minutes helps the flavours combine.
