Vegetarian Kacang Pool
Serves: 4
Preparation and cooking time: around 45 minutes
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, crushed
1 small piece of ginger, grated
1 tsp ground cumin
1 tsp ground coriander
½ tsp smoked paprika
A pinch of chilli flakes, optional
400g broad beans or fava beans, cooked and drained
400g chopped tomatoes
200ml vegetable stock
1 tbsp tomato paste
Juice of 1 lime
A handful of fresh coriander, chopped
Salt and freshly ground black pepper
To serve:
Toasted bread
Fresh herbs
Sliced chilli
A drizzle of olive oil
Build the Flavour Base
Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook gently until soft and golden. This slow cooking process creates the sweet base that gives the stew its depth.
Add the garlic and ginger, then cook for another minute until fragrant. Stir in the cumin, coriander, smoked paprika and chilli flakes, allowing the spices to release their aromas.
The combination of warm spices is essential to kacang pool’s character, creating a balance of earthiness, heat and richness without overpowering the beans.
Cook the Bean Stew
Add the tomato paste and stir well to combine with the spices. Pour in the chopped tomatoes and vegetable stock, then bring the mixture to a gentle simmer.
Add the beans and cook for around 15–20 minutes, allowing the flavours to develop and the sauce to thicken.
For a creamier texture, lightly mash some of the beans with the back of a spoon while leaving others whole. This creates a stew with both richness and texture.
Season with salt, black pepper and lime juice. The acidity from the lime helps balance the spices and adds freshness to the finished dish.
Serve with Fresh Garnishes
Spoon the kacang pool into bowls and finish with fresh coriander, sliced chilli and a drizzle of olive oil.
The stew is traditionally enjoyed with bread, which can be dipped into the rich sauce and used to absorb the flavours. Toasted bread adds a pleasant contrast to the soft beans and creamy texture.
