Grilled sardines are a classic part of Mediterranean cooking, celebrated for their simplicity, bold flavour and connection to coastal traditions.
This recipe brings a modern twist to the dish by pairing the rich taste of sardines with a bright blackberry escabeche — a sweet, tangy and aromatic sauce that adds freshness and complexity.
Escabeche is a traditional preservation technique used across Spain and other Mediterranean regions. Usually based on vinegar, oil and spices, it creates a balance of acidity and flavour that works particularly well with oily fish.

Grilled Sardines with Blackberry Escabeche

Serves: 4
Preparation and cooking time: around 40 minutes
Ingredients:
16 fresh sardines, cleaned
2 tbsp olive oil
Sea salt
Freshly ground black pepper
For the blackberry escabeche:
150g fresh blackberries
100ml vinegar
100ml extra-virgin olive oil
1 small red onion, thinly sliced
2 garlic cloves, finely chopped
1 bay leaf
A few sprigs of fresh thyme
1 tsp honey or sugar
A pinch of chilli flakes, optional
To serve:
Fresh herbs
Crusty bread
Lemon wedges

Cooking the Sardines

Sardines are best cooked simply to highlight their natural flavour.
Pat the cleaned fish dry, then season with sea salt and black pepper. Brush lightly with olive oil before grilling.
Cook the sardines over high heat for a few minutes on each side until the skin becomes crisp and the flesh is cooked through. The exact cooking time depends on the size of the fish, but sardines generally require only a short time on the grill.
The smoky char from grilling complements the richness of the fish and creates a contrast with the bright blackberry sauce.

Combining the Flavours

Arrange the grilled sardines on a serving plate and spoon the blackberry escabeche over the top or serve it alongside the fish.
Allowing the sardines to rest briefly with the sauce helps the flavours combine. The acidity cuts through the richness of the fish, while the fruit adds a surprising freshness.
Serve with warm bread to absorb the sauce and a few fresh herbs for extra colour and aroma.

A Modern Take on Spanish Tradition

This dish shows how traditional Mediterranean techniques can be adapted with seasonal ingredients. Sardines have long been valued in Spanish coastal cooking for their flavour, affordability and nutritional benefits, while escabeche provides a versatile way to enhance seafood.
The combination of grilled fish and blackberry creates a balance between savoury, sweet and acidic flavours, turning a simple ingredient into a memorable seasonal meal.
With minimal preparation and a focus on fresh produce, this recipe captures the spirit of Mediterranean cooking: letting quality ingredients speak for themselves.
